recipe:

  • 100 g glutinous rice flour
  • 50 g sugar
  • 180 ml room temperature water
  • 1/2 cup whipping cream
  • 1 tbsp sugar
  • whole strawberries
  • corn starch or potato starch for dusting

method:

  1. Whip your cream and sugar together until stiff peaks form. You can make strawberries & cream mochi in two ways — one way is to coat a whole strawberry in cream, and the other way is to scoop mounds of plain cream out. Put these in the freezer until firm while you prepare your mochi.
  2. Combine your glutinous rice flour, sugar, and water and whisk until combined.
  3. Cover, and put on HIGH in the microwave for one minute (my microwave is 1000 W, adjust as necessary).
  4. Take out and stir.
  5. Cover, and put on HIGH in the microwave for one minute.
  6. Take out and stir. It should be becoming quite sticky by this point.
  7. Cover, and put on HIGH in the microwave for 30 seconds.
  8. Take out and stir.
  9. Cover, and put on HIGH in the microwave for 30 seconds.
  10. Sprinkle corn starch or potato starch onto your work surface and using a large knife, cut the mochi into even pieces.
  11. Dust your hands with corn starch or potato starch and wrap the mochi around your filling, using your fingers to pinch the mochi shut.
  12. For the plain cream-filled mochi, use scissors to make an incision down the middle and insert a fresh strawberry.
  13. You’re done!
